This guacamole has lots of colorful cherry tomatoes to lighten it up. Cumin and lime add a nice flavor boost.
- 1 large avocado
- 1 cup quartered red and yellow cherry tomatoes or diced tomato, drained
- 1 tablespoon red onion diced
- 1/2 teaspoon ground cumin or freshly ground cumin seeds
- 1 1/2 teaspoons lime juice
- 1/4 teaspoon kosher salt
- Mash avocado in a medium bowl. Stir in remaining ingredients. Serve with chips or Carne Asada.
