Fried Okra and Shallots with Fresh Cilantro

Deep Fried Okra & Shallots with Fresh Cilantro is the perfect side to accompany any southern meal.

Ingredients

  • 1 qt peanut oil
  • 1/4 lb fresh okra
  • 1 shallot
  • 2 tbsp fresh cilantro
  • 1 small Lemon
  • Maldon sea salt to taste

Instructions

  1. Heat oil to 350°F.
  2. While oil is heating, remove stems & slice okra in half lengthwise.
  3. Cut shallot into thin slices.
  4. Fry okra until crisp & golden, about 7 or 8 minutes.
  5. While okra fries, coarsely chop cilantro.
  6. Add shallots to okra for the last 2-3 minutes of frying.
  7. Remove with a slotted spoon & let excess oil drain onto a paper towel.
  8. Toss with fresh cilantro, salt and a squeeze of fresh lemon
